In anticipation of their forthcoming cookbook, Stevens Seafood and Grille has released their world-famous Shrimp Cocktail recipe. According to their publicist, the secret to delicious shrimp cocktail includes a very cold presentation vessel, their unique appetizer forks and, of course, the freshest shrimp they can get their hands on.
The recipe below yields about 25 jumbo shrimp.
4 Quarts of Cold Fresh Water
1 Can of Your Favorite Beer (no light beer please)
2 Tablespoons of Salt
1/2 Cup of OLD BAY Seasoning
4 Pounds of Fresh Jumbo Shrimp (heads on, tails on)
Bring all ingredients except the shrimp to a boil.
Clean shrimp under running water but leave the heads and tails on for flavor.
When the liquid is boiling, drop in the shrimp and let boil until cooked, about 4 minutes or until shrimp turn pink and curl up.
Place fully cooked shrimp in a large bowl with ice water to cool them down for easier handling.
Once cooled, remove the heads, remove the vein and shells. You may wish to leave the tail on as a “handle” and for presentation purposes.
Keep the shrimp chilled until ready to serve – preferably serve the same day.
2 Cups Ketchup (Sir Kensignton’s Classic Ketchup is preferred)
2 Teaspoons Worcestershire Sauce
2 Tablesspoons Lemon Juice
2 Teaspoons Prepared Horseradish (Atomic Extra Hot is preferred)*
* Caution: This Horseradish Sauce is very hot. If you are sensitive to spicy foods, choose your own favorite super-market prepared horseradish sauce.
Mix all ingredients and cook in the refrigerator for at least 2 hours before serving.
Pour the cocktail sauce into individual Martini Glasses and surround the rim with the cooked and cooled shrimp. Garnish with slices of lemon and lettuce as desired. The secret to the freshest taste is using a Martini Glass that can be safely pre-chilled. This stainless steel stemless Martini glass can be chilled in the freezer until ready to use. Doing so will keep the cocktail sauce and the shrimp as cold and delicious as possible. To add to the unique Stevens experience, Stevens uses cute, individually designed fruit forks for for dipping the shrimp in their signature cocktail sauce and their patrons seem to think those forks add to the experience.
